Raaga Home Kitchen: A Cultural and Culinary Experience
The Evening Begins with Pakodas
As our guests settle in, Parvinder and Anu Baiji are already busy preparing an assortment of freshly made pakodas. The aroma of the crispy fritters fills the kitchen. Alongside them comes a freshly prepared green chutney, which adds just the right touch of freshness, spice and tanginess to the starters. The first bite says it all.Smiles appear, fingers return for another piece, and soon our guests are happily licking their fingers. The expressions on their faces say what words sometimes cannot—a spontaneous “Wow!”And this is only the beginning.
The Magic Begins on the Four-Burner Stove
Our next dishes are prepared on a simple four-burner gas stove, but what happens on those burners is anything but ordinary. One burner is dedicated to chicken curry, while alongside it, Parvinder begins preparing bharma baingan—stuffed baby eggplants. The chicken curry begins slowly and patiently. We start by heating the pan and adding tej patta (bay leaf), cloves and black pepper. Within moments, the spices begin to release their oils and aroma. The fragrance slowly spreads through the kitchen, creating an anticipation that is almost as important as the food itself. Then come the onions, garlic and ginger paste. They are cooked patiently, allowing the flavours to develop. After about five minutes, something magical happens—the desi ghee begins to separate from the masala. This is one of those little moments in Indian cooking that experienced home cooks know instinctively. The air is now infused with the fragrance of roasted spices, ginger, garlic and ghee.Into this rich masala goes the marinated chicken, which is then cooked slowly over a gentle flame. Slow cooking allows the spices to penetrate the meat and gives the curry its depth, richness and unmistakable home-cooked character. And while all of this is happening on one burner, Parvinder is already working her magic on the other.
Parvinder's Kitchen, Her Way
Preparing two dishes simultaneously may look effortless when Parvinder does it, but there is a lifetime of experience behind that ease. While the chicken curry slowly develops its flavours, she prepares the bharma baingan alongside it. There is a rhythm to the way she moves around the kitchen—checking one pan, stirring another, adding an ingredient here and adjusting the flame there. This is not cooking from a written recipe. It is cooking by experience, instinct and memory. And the rest of the recipe? That is best learnt directly from Parvinder herself. She explains the process in her own lively and engaging way, sharing the little secrets and techniques that turn ordinary ingredients into extraordinary home food.
